Sooke, BC - Edward Tuson

On the southwestern shores of Vancouver Island, Sooke is blessed with stunning scenery and a year-round growing season. Chef Edward Tuson calls it a "chef's paradise" – one that has helped make his cuisine at Sooke Harbour House an international success for the last 12 years. At the Harbour House, Edward works under a strict "100 km rule" for every ingredient, creating dishes that are as sublime as the hotel is refined. But in this episode, Chef Tuson steps out of the Harbour House kitchen for a more rustic, improvisational event: one of his locally renowned barn dinners.

The menu for this affair won't be decided until Edward has visited each of his suppliers and gathered the best of what they have to offer. And he has only two days to do so.
We follow the Ducati-riding chef as he travels to scenic Sea Bluff Farms where they raise rare Tamworth and Berkshire pigs, to the pier in Sidney for fresh fish and seafood from Satellite Fish Market, and to ALM Farms for organic greens. We also see a couple of vendors – like the "Seaweed Lady," Diane Bernard - come to him with goods just picked that morning.
Racing against the clock, we watch Edward agonize over and then prep for his elaborate meal, made on his own terms.
